AI Is Becoming the Shelf. That Changes Which Ingredients Win.

A new report from Euromonitor International, covered this week by Ingredients Network, put a number on something most brand teams have only felt anecdotally. 22% of consumers now use AI tools to inform what they buy, and roughly one third of those queries touch on health. Euromonitor's Manuel Leckel frames it plainly: one in five people now ask an AI assistant for a reference before they choose.

Most coverage reads this as a marketing problem. How do we get recommended. The more useful question, for anyone who decides what goes into a product, is different. If an assistant, and increasingly a personal nutrition app, becomes the layer between a shopper and the shelf, then the assistant selects on criteria it can actually read and verify. That quietly rewrites which ingredients win.


From the shelf to the recommendation

The scale of the shift is already visible in the numbers. Traffic to US retail sites from AI sources rose more than 690% over the 2025 holiday season, and those visitors converted 31% more often than other traffic. Brands are being told to move from search engine optimisation to what the report calls generative AI optimisation: structuring product information so a language model can read it, understand it, and recommend it.

The structural point sits underneath those tactics. An assistant does not respond to a health halo, an attractive pack, or a familiar logo the way a person scanning a shelf does. It responds to claims it can substantiate. And consumer trust in claims is already thinning. Over six years, 10% fewer consumers closely read nutrition labels, yet 50% of new launches still carry a health claim. When the reader is a model rather than a shopper, a claim it cannot verify is not merely ignored. It can be actively discounted.

So the competitive question moves from "does our label look healthy" to "can our ingredient prove what it claims, in data a model and a regulator will both accept."


Why AI curation rewards algae

This is where algae has a structural advantage, not because it is fashionable, but because its nutritional and environmental profile is measurable and increasingly documented. It is also a feedstock across categories rather than a single niche product:

  • Protein: spirulina and chlorella deliver complete amino acid profiles at high protein density.

  • Omega 3: microalgal oil supplies DHA and EPA without touching a fishery.

  • Micronutrients: iron, beta carotene, and other actives.

  • Color and function: natural pigments and texturisers that replace synthetic additives.

The evidence base is catching up to the story. A 2025 randomised controlled trial in adults, published in the International Journal of Molecular Sciences, found DHA and EPA from microalgal oil were statistically no less bioavailable than the same nutrients from fish oil. That is exactly the kind of direct, peer reviewed comparison an AI recommender can lean on, and that a legacy supply chain cannot easily argue away.


What this looks like on the plate today

The Israeli producer AlgaeCore already sells a spirulina based seafood alternative under the SimpliiGood brand. The base ingredient runs up to 74% protein and carries iron and beta carotene, and the company controls the process from harvest to finished ingredient. Pilots have run in Germany, the Netherlands, Italy, Israel, and Switzerland, with retail launches from late 2025, FoodNavigator reported.

The point is not the novelty of algae salmon. It is that a vertically integrated producer can document exactly what is in the product and where it came from. That is precisely the substantiation an AI driven recommendation, and a cautious buyer, both need.


The honest read on carbon and cost

It is worth being clear about which environmental claims hold up, because overreach is what a model, and a regulator, will punish. The weak version is the broad idea that algae is carbon negative, or that cultivation sequesters carbon at meaningful scale. Those claims depend heavily on system boundaries and energy source, and they are contested. Do not build a case on them.

The strong version holds up well. Replacing fish derived omega 3 takes pressure off wild fisheries. Some strains grow on land and water that conventional crops cannot use, with less freshwater per kilo of protein. And the nutrition is real and increasingly documented rather than asserted.

On price, honesty helps here too. Algae ingredients often carry a visible premium per kilo. But on total cost of production, once you price in regulatory exposure on synthetic additives, the commercial value of a claim a model will actually surface, and the cost of a supply shock, the premium narrows and sometimes disappears.


The part that decides it: sourcing

The science is not the hard part. Supply is. IMARC values the global algae products market at USD 2.0 billion in 2025, growing to USD 3.2 billion by 2034, a CAGR of 4.40%. That is real, but still shallow and fragmented, which is exactly why sourcing is where these projects succeed or stall.

Strains vary in nutrient profile and in regulatory status from one market to the next. Producers vary in quality, traceability, and capacity. And the documentation an AI recommender or an EU regulator wants is only ever as good as the supply chain standing behind it. Sourcing algae reliably means matching the right strain and producer to the application, confirming the regulatory path in the destination market, and building supply that does not break when a single producer does.
